Gelato, from scratch
Every recipe at Elis is developed and calculated in-house, built from individual ingredients and made in small batches. Unlike ice cream, gelato contains less fat and less air, which means more intensity in every scoop.
We don't use ready-made gelato mixes. We build every flavour ourselves, from scratch, one ingredient at a time. No shortcuts, no compromises.

Every flavour is calculated for taste and texture. We know every ingredient by name, and exactly why it's there.
No alcohol, no pork gelatine.
Organic milk & cream
We use organic milk and cream from Danish producers. In gelato, dairy isn't a background ingredient, it's the foundation of every flavour we make.
Chocolate, fruit & more
Our chocolate is Valrhona, trusted by the world's best pastry chefs. Our hazelnuts are IGP certified from Piedmont. For fruit sorbets, we source single-variety purées made from 100% fruit, grown for flavour, like our lemon sorbet made with Femminello lemons from Syracuse.
